Ingredients
For 4 servings (one normal-appetite adult each). Per serving in brackets.
- Rice noodles320 g (80 g)
- Frozen prawns (raw)400 g (100 g)
- Eggs160 g (≈ 3 eggs) (40 g (≈ 1 egg))
- Spring onion / scallion60 g (≈ 4 spring onions) (15 g (≈ 1 spring onion))
- Lime40 g (≈ 0.5 lime) (10 g)
- Soy sauce48 g (12 g)
- Brown sugar24 g (6 g)
- Cashews60 g (15 g)
- Sunflower / vegetable oil40 g (10 g)
Method
- Soak noodles 8 minutes; drain.
- Stir-fry prawns 2 minutes, push aside, scramble the eggs.
- Add noodles, soy, sugar and lime; toss; top with cashews and spring onion.
