Sausage & lentil casserole

Ingredients
For 4 servings (one normal-appetite adult each). Per serving in brackets.
- Pork sausages (raw)480 g (120 g)
- Green/brown lentils (dried)200 g (50 g)
- Onion (brown/yellow)200 g (≈ 2 onions) (50 g (≈ 0.5 onion))
- Carrot200 g (≈ 3.5 carrots) (50 g (≈ 1 carrot))
- Canned chopped tomatoes400 g (100 g)
- Dried thyme4 g (1 g)
- Vegetable stock cubes12 g (3 g)
Method
- Brown sausages; add onion and carrot.
- Add lentils, tomatoes, thyme, stock cube and 250 ml water per serving.
- Simmer 30 minutes.
In the galley

- Plan ahead: thaw about 12 hours before.
- Stow the main ingredients in the freezer.
- Make ahead: cook in port and freeze in portions.
- One pot — less to secure, less washing-up with fresh water.
