Ingredients

- Red lentils (dried)240 g (60 g)
- Tomato paste60 g (15 g)
- Canned chopped tomatoes320 g (80 g)
- Onion (brown/yellow)160 g (≈ 1.5 onions) (40 g)
- Bell pepper200 g (≈ 1.5 peppers) (50 g (≈ 0.5 pepper))
- Smoked paprika6 g (1.5 g)
- Brown sugar20 g (5 g)
- Red wine vinegar20 g (5 g)
- Wheat tortillas392 g (≈ 8 tortillas) (98 g (≈ 2 tortillas))
- Salt4 g (1 g)
Method
- Soften onion and pepper in a splash of water 5 minutes.
- Add lentils, paste, tomatoes, paprika, sugar, vinegar and 150 ml water per serving; simmer 20 minutes until thick.
- Spoon into warmed tortillas.
