Ingredients
For 4 servings (one normal-appetite adult each). Per serving in brackets.
- Canned white beans (cannellini)800 g (200 g)
- Canned chopped tomatoes600 g (150 g)
- Onion (brown/yellow)200 g (≈ 2 onions) (50 g (≈ 0.5 onion))
- Garlic (bulb)20 g (≈ 0.5 bulb) (5 g)
- Extra-virgin olive oil32 g (8 g)
- Dried thyme4 g (1 g)
- Vegetable stock cubes12 g (3 g)
Method
- Soften onion and garlic in oil.
- Add beans, tomatoes, thyme, stock cube and 150 ml water per serving.
- Simmer 15 minutes; mash a few beans to thicken.
In the galley

- Stow the main ingredients in dry stores — nothing here needs a fridge.
- Make ahead: cook in port and freeze in portions.
- One pot — less to secure, less washing-up with fresh water.
