One-pot red lentil curry (dal) with rice

Ingredients
For 4 servings (one normal-appetite adult each). Per serving in brackets.
- Red lentils (dried)320 g (80 g)
- Coconut milk (can)400 g (100 g)
- Onion (brown/yellow)240 g (≈ 2 onions) (60 g (≈ 0.5 onion))
- Garlic (bulb)20 g (≈ 0.5 bulb) (5 g)
- Fresh ginger20 g (5 g)
- Curry powder16 g (4 g)
- Ground turmeric4 g (1 g)
- Canned chopped tomatoes320 g (80 g)
- Sunflower / vegetable oil32 g (8 g)
- Basmati rice300 g (75 g)
Method
- Fry onion, garlic, ginger and spices in oil.
- Add lentils, tomatoes, coconut milk and 200 ml water per serving; simmer 20 minutes.
- Serve over rice.
